Peanut Butter Cheesecake Truffles

This is such an easy recipe!!!
I have made a couple of different variations and every one of them have been yummy!
Cheesecake Truffles

1 (8oz.) package Cream Cheese, softened
1- 1lb. package Nutter Butter Cookies 
(or other sandwich cookies-I have used Oreo's, Vanilla Creams, and Mint Oreo's)
12oz. Chocolate candy coating
(you can substitute a 12oz. pkg milk or semi-sweet chocolate chips melted with 1 Tbsp. solid shortening)


In a food processor crush cookies until fine. Cut softened cream cheese into 8 pieces, add to cookie crumbs and process until mixture comes together in a large ball.


Remove dough from food processor, and then starting with a walnut size amount of dough, roll between your palms to form a ball. Place on a baking sheet.  Repeat until all of the dough is gone.
Chill balls 2+ hours in the fridge until very cold and firm.



Melt dipping chocolate in the microwave according to package directions. (if using chocolate chips melt them until soft, add the solid shortening, and continue to microwave stirring every 15-20 seconds until melted, smooth and shortening is incorporated.)
Now using a fork or skewer dip each ball in the melted chocolate coating well. Place back on the baking sheet, and repeat until all the truffles have been dipped.



Return the truffles to the fridge and chill until chocolate is set and firm. Store in the fridge.
Makes approximately 36 truffles.

Option: sprinkle chopped honey roasted peanuts over truffles before chocolate is set, then refrigerate.

I have never tried to freeze these, they simply don't last long enough to try.
However, if you freeze them, I recommend doing so before you coat the truffle with chocolate. Then simply removed them from the freezer, allow them to partially thaw, and coat with the melted chocolate.
When Chocolate is frozen, it often develops a "white film" on the surface, which, while edible, is not very attractive. The white film is caused by a small amount of milk separation in the chocolate...
