Coconut Oatmeal No Bake Cookies

Here is another variation of the Indiana No Bake Cookies recipe from OUR COOKIE NATION  series we are doing...

Easy Coconut Oatmeal
 No Bake Cookies
2 c. sugar
3/4 c. butter
2/3 c. milk
1 (3.4 oz) box instant coconut flavor pudding mix
2 1/2 c. quick cooking oats
1 c. sweetened shredded coconut
1/2 tsp. vanilla

In a large pan, mix together the sugar, butter and the milk.  Bring to a boil.  Boil 2 minutes.  Turn off the heat, add in the pudding mix, oats, coconut and vanilla.  Let stand 5 minutes.
Drop by teaspoon onto waxed paper, allow to cool completely and enjoy!  Store in airtight container.

  1. My daughter's favorite cookies are the chocolate no bake. We have called them "Thirsty Cookies" since she was little, because she said they made her thirsty after eating thejm. I would like to give this blonde version a try. Joni

  3. I made these today and they tasted wonderful but they didn't set up very well and were a little on the sweet side. I might tweak the recipe and make them again.

  4. Well between the sugar pudding and sweetened coconut no wonder its in sweet town. I would limit to 1 cup and maybe try brown sugar? The origanal no-bakes are pretty intense too at times. Maybe try placing them in a cool area or in the freezer till firm. :)

  6. Needed a quick treat to take to my neighbors, these cookies were perfect. They set up just like the picture shows, they are sweet but still taste great. I used vanilla pudding, I didn't have instant coconut on hand. I give this recipe 'two thumbs up'! Thanks Amber :-)

I just made these...I used brown sugar instead and, by accident, only used 1 stick of butter (I thought the recipe said 3/4 stick and decided to use ”extra”, only to find out I used less!), and they turned out really well and set up perfectly! And they're delicious - a great alternative to the original.

  9. I just made this recipe, using vanilla pudding mix. Way too sweet and I love my stuff sweet! I am all about coconut so I jumped on this recipe. I will make again, but I will leave out the pudding mix and increase coconut to 2 cups and oats to 2 cups plus use coconut extract instead of vanilla. Then I will drizzle melted chocolate on top or maybe even coat and have something similar to Mounds Bar.

    1. I just made these today as well. I could not find any coconut instant pudding so I used sugar free white chocolate. They tasted yummy!! I like your idea too and may have to try that as well.

  10. I have made lots of no bake cookies! When I first attempted them they never set up. I found that you have to use real butter and canned evaporated milk is great to use in place of the milk. Cannot wait to try these :)

  11. I did 1 c brown sugar and 1 c Gran sugar and put a little extra oatmeal and coconut in........Delicious!!!!!!!

  13. I haven't tried to make these yet (but I will soon!)
    Perhaps when the cookie didn't set up well, the humidity was up. High sugar foods (like fudge, divinity, pecan pie) will tend to be runnier if the outside humidity is high.

    1. If substitute margarine, today's margarine has so much water added that it will not set up. Adding another 1/2 cup oatmeal usually solves it. Also some brands of peanut butter can affect the results. Like making candy, it is all about the correct proportion of liquid to sugar.

  14. I added about 1/2 cup peanut butter to it and it cut the sweetness down and helped them to set up better. Delish!!

  15. I only had 1/2 a box of pudding, so I used that and then also added about 1/2 cup peanut butter! Not so sweet now and set up great! Delish!

  16. Next time I will read the reviews before I spend the time and money to make something. Very disappointed in the results...I do not want to "tweak" a recipe...I want it to work the first time!

  18. I made these cookies today and they taste great... a little too sweet but great nontheless. The only thing is that they didnt set like a cookie they kinda look like the picture but when i lift the cookie its still gooey... any ideas why? maybe next time i will try stick of butter and cut back on the sugar and use evaporated milk instead of regular milk... maybe that will help set better! thanks for the recipe though. :)

  21. I made these tonight, and they were so gooey! They never firmed up, and were very sweet. Like someone else said, I wish I had read all the comments before making. I have them in 'cookie blobs' in the fridge now... Hoping I don't wake up to a 'cookie mush' ... No idea what else to do with them..?

  22. I had the same issue as pretty much everyone here... I have never made no-bake cookies before and they taste great but they are a gooey mess. Very disaappointed that I followed the recipe perfectly and they didn't turn out.

  23. I am made these tonight but used vanilla pudding because it is what I had, and and used orange extract because of the vanilla pudding and I wanted some flavor. Yummo! They set up great. I think the trick is making sure you cook it long enough. I didn't start my 2 minutes till the butter was melted completely even though I had some bubbles already. They are very sweet but next time I will make them into "bites" rather than cookies. A great alternative to the chocolate no bakes I have made my whole life, love them both! Thanks for sharing!

    Also, thank's for the great tip on waiting until the butter is completely melted-I think that may be a huge help to those that have had a hard time getting these cookies to set up-BRILLIANCE!

    mmmmmm.... Delicious!!! Used chocolate pudding in the 2nd batch & they are great!

  30. I can't imagine how sweet this would be if I would have used the full amount of sugar! I reduced the sugar to 1 cup, only used 1 stick of butter, and increased the oatmeal to 3 cups (the old fashioned kind since I never have the quick cooking on hand). It turned out absolutely delicious!!!

  35. I,too, wish I would have read the reviews before I made this recipe. Mine did not set up either. So I put them in an 8 x 8 pan and put it in the refrigerator, hopefully the will set up, or we will have coconut oatmeal for breakgast

  36. Often with no bake cookies they need to set up over night. I made a different recipe just the other day and was concerned as to eat they were not setting up so I called my mom and she told me that they needed to sit over night. Next morning they were perfect :)

  39. Just made these and they or great, I did cut down on sugar to one cup and boil for 4 minutes. Turned out great.

  40. I have a no-bake recipe and the key seems to be how long you boil the mixture. My recipe calls for 3 and 1/2 minutes of boiling. Then I put the pan in the fridge for 15 minutes, and THEN I stir hard for a while, and spoon out the cookies ha me I can see the mixture has thickened. Try it!
